Our catering menus

Originally from Belgium and living in Ireland for more than 17 years, my food is inspired from different cuisines: French, Belgian, Middle East, Irish, Mexican, Italian...

There will be a mix of those influences in my menus but you can also choose one specific theme.

Autumn Menus

Seasonal ingredients (pumpkin, apples, pears, root vegetables, mushrooms)
Warm spices (cinnamon, nutmeg, clove, ginger)
Hearty, comforting dishes (soups, stews, roasted meats, casseroles)
Rich colours and rustic presentation

Winter Menus

Seasonal ingredients (root vegetables, fennel, pears, apples, Brussels sprouts, cranberries, citrus, winter greens)
Hearty dishes (gratins, casseroles, rich soups, stews, roasted vegetables)
Warm, robust flavours (sage, rosemary, thyme, cloves)
Comfort foods and cozy presentation

Spring Menus

Seasonal ingredients (asparagus, peas, radishes, baby greens, spring onions, berries, citrus, rhubarb).
Light, fresh dishes (herb-crusted chicken, salmon, spring vegetable medleys, fruit-forward desserts).
Colourful, cheerful presentation and use of edible flowers or herbs.

Summer Menus

Seasonal ingredients: tomatoes, corn, courgettes, cucumbers, melons, berries, peaches, stone fruits, fresh herbs, leafy greens, citrus.
Light proteins: grilled fish, chicken, seafood, plant-based options, crisp salads
Refreshing flavours: citrus dressings, fresh herbs, tangy marinades, chilled soups.
Cool desserts & drinks: , berry tarts and cheesecakes,

Xmas Menus

Traditional festive ingredients: turkey, salmon, honey-glazed ham, root vegetables, cranberries, chestnuts, Brussels sprouts, winter herbs, spiced desserts.
Classic holiday dishes: salmon gravlax, ham hock terrine, chicken liver pate, festive desserts, mini Baileys cheesecakes
Atmosphere: warmth, togetherness, celebration, fairy lights, winter comfort.
